You think it is impossible to make good patties without any eggs? I prove you wrong!
What you need:
1 | carrot |
300g | Tofu |
2 | spring onions (if out of season, use one normal onion) |
4-5 tbsp | oil |
1/2 hand full | herbs, e.g. parsley and coriander |
4 tbsp | breadcrumbs |
1-2 tbsp | grounded almonds |
Salt, Pepper |
(if you want an asian flavor, try curry and cumin)
How it’s made:
Peel and rasp the carrot. Crumble the tofu with a fork. Prepare the onions and the garlic and put them together in a pan with oil for about 2 minutes. Then put everything together into one bowl. Season it to taste and mix well. If the mass is too soft to form patties, add more breadcrumbs until it feels safe to form patties. Otherwise they will fall apart in the pan. They will still be delicious, though.
Put your raw patties into the pan with some more oil and roast them for 3-4 minutes on each side. Put it on some kitchen roll in order to get rid of some of the oil. Then serve and enjoy 🙂
